Happy Holidays from your Cle Elum Kiwanis!

We still have 11 beautiful trees left by our Kiwanis Tree Kiosk on the corner of Pioneer Coffee. Pick out your tree and pay across the street at Farm and Home.

Thank you to Farm and Home and Pioneer Coffee for your support of Kiwanis. We appreciate you! Please remember to shop and eat locally to support our community and the amazing businesses committed to the well-being of our community.

Here is my recipe for greens! They are not only delicious, but high in vital minerals and nutrition: THIS IS A FAMILY FAVORITE!
In a large stock pot take your favorite greens (cleaned and cut up) and cover with water. I use three kinds of greens: kale, chard, and mustard. Leave in the stems as they have the majoroty of the nutrition!

Cover with a lid and let simmer on 5 (medium heat) stirring occassionally, moving the greens from the bottom of the stockpot to the top to cook and breakdown evenly.

Braise 7 - 8 oxtails or beef shortribs and drop into the greens.
Let simmer for 24 hours. I turn them down at night to low, and return them to medium heat during the day.

When the greens are soft:
Add a good amount of Amish butter or a butter with a high fat content. You can also add some chicken broth and beef broth to boost the flavor.

Let it cook down with the butter and broth until all is combined together.

Serve with cornbread or rice, and baked chicken breast.

The recipe is a decades old family treasure and Ann has kindly shared it with all of us.

Santa’s Whiskers
Makes 3-4 dozen

Ingredients:
o 1 cup butter
o 1 cup sugar
o 2 tbsp milk
o 1 tsp vanilla or rum extract
o 2-1/2 cups flour
o ¾ cup finely chopped red and green candied cherries
o ½ cup finely chopped pecans
o ¾ cup flaked coconut

Instructions:
Cream butter and sugar. Blend in milk and vanilla. Stir in flour, candied cherries and nuts.
Form into rolls 2 inches in diameter and 8 inches long. Roll in coconut, wrap, and chill several hours or overnight. Slice ¼ inch thick and place on ungreased cookie sheet. Bake at 375° for about 12 minutes or until edges are golden. ... See MoreSee Less

Bright Greetings to each of you as we are in the joyful energy of the season!
Tree sales continue right up to the week of Christmas, so if you have not yet picked out a tree, we would love to have you stop by!
You can pay at the Kiwanis Tree Kisosk by Pioneer Coffee, or take your tag across the street to Farm and Home and pay for your tree.

We appreciate your kindness and support, as we are able to contriubte to local groups in needs of support. 100% of our donations go to local groups: Boyscouts, The Shop, and The Summer Program (through Community Builders) in Cle elum (to name a few).

Christmas was my Mother's favorite time of the year...
Her birthday was on December 15th and she had the decorations up early! The house smelled of freshly baked breads and rolls, desserts, and there was always a pot of tea ready for visitors.

Here is my Mom's 5 Star Recipe for Pumpkin Bars! I will preface the recipe with the statement that they are addictive!:

PUMPKIN BARS:
4 Eggs
1 & 2/3 Cup Sugar
1 Cup Oil
1-16 Oz. Can Pumpkin
2 Cups Flour
2 Teaspoons Cinnamon
2 Teaspoons Baking Powder
1 Teaspoon Salt
1 Teaspoon Bakng Soda

Beat Eggs: add sugar & beat well, then beat in the oil. Add the Pumpkin. sift or mix dry ingredients and add to the egg mixture until all the flour is moist (don't overbeat!) Pour into a greased & floured 15 X 10 X 1 inch jelly roll pan:; bake at 350 degrees for 25 minutes. coll on pan on rack.
FROSTING:
Beat 1 - 3 oz. pkg. cream cheese with 1/2 cup margarine, 2 cups powdered sugar, and 1 teaspoon vanilla. Spread on cooled cake. Sprinkle top with finely chopped nuts (pecans or walnuts). Cut into bars and serve.
